The perfect green smoothie for healthy weight control, with zucchini, kale, buckwheat and an immunity booster super powder, Baobab!
1/2 Cup Baby Kale or Spinach
1/2 Cup Green Grapes (frozen)
1/2 Organic Zucchini (I peel it, chop it and freeze it - makes an awesome thickener for smoothies, perfect alternative to bananas.)
1 Handful Fresh Mint Leaves
1/2 Cup Buckwheat Groats (rinsed, soaked overnight)
1 Cup Hemp Milk – or any other plant-based milk (Freeze in an ice cube tray and thaw 20 minutes before blending to create a slush)
2 Tablespoons Baobab Powder
Soak the Buckwheat Groats in 3-4 times the amount of water, overnight. Add a Teaspoon of Apple Cider Vinegar to the water. Soaking this way will break down the natural Phytic Acid (present on many seeds and grains to protect them) and it's important to remove it before we eat.
Buy organic zucchini - or leave it out (you need to buy organic because this veggie (and like berries) is considered high in insecticide absorption if not grown organically).
Blend liquids and leaves first, then add the zucchini and the rest of the ingredients and blend until smooth.
You can double the recipe and freeze it in Ice Cube trains to use later in the week.
