Hemp Ranch Dressing is light, refreshing and delicious over salads, roast veggies, or used as a veggie dip! It’s a quick and easy hemp seed dressing made with shelled hemp seeds, lemon and herbs and is raw, nut free, oil free, soy free and vegan.
Shelled hemp seeds, (aka hemp hearts, hulled hemp seeds) is used as the base for this dressing.
Hemp seeds are an amazing source of essential fatty acids and amino acids – in fact they contain all 20 amino acids – a near complete protein source.
Nutrient rich. They also contain high concentration of vitamins and minerals such as iron, vitamin E, thiamine, riboflavin, folic acid and many other micro-nutrients that your body needs.
No need to soak. Another great thing about hemp seeds is that they do not need to be soaked to aid in digestion, they can be eaten raw and the body will absorb and digest all the nutrients readily and easily.
If you haven’t used shelled hemp seeds before, you’ll want to add these great little seeds to your lifestyle. They are easy to sprinkle in smoothies, on salads, nourish bowls, or on top of your toast and jam. And in this salad dressing recipe, they create a wonderful creaminess!
Cup Shelled Hemp Seeds
1/4 Cup Fresh Lemon Juice (approximately 1 Lemon)
1/4 Cup Water
1 Tablespoon Olive Oil
1 Teaspoon Dijon Mustard
1 Teaspoon Garlic Powder
1/4 Teaspoon Nutritional Yeast
1 Green Onion, Finely Minced (approximately 1/4 Cup)
1 Sprig of Dill, Chopped (approximately 1 Tablespoon)
Sea Salt and Ground Black Pepper, To Taste
Add the shelled hemp seeds, lemon juice, water, olive oil, Dijon mustard, garlic powder, nutritional yeast, salt and pepper to a high-speed blender.
Whizz the mixture up on high until you have a smooth and creamy texture.
Scrape the dressing into a small bowl and stir in the green onions and dill.
Cover the dressing and store in the refrigerator while the veggies are roasting.
