Cashew Coconut Ice-cream with Dark Chocolate
Ingredients

6 Madjool Dates - pitted

80g Cashews

4 Tablespoons Hemptons Shelled Hemp Seeds

200ml Coconut Milk

2 Tablespoons Water

2 1/2 Tablespoons Cocoa

1 Teaspoon Pure Vanilla Powder

1/2 Tablespoon Coconut Sugar

Dark Chocolate

Quinoa Puffs or coconut chips for topping

Instructions

Soak the hemp seeds, dates and cashews overnight.

Discard the soaking liquid.

Place in a food processor and combine with the remaining ingredients.

Taste and sweeten with more coconut sugar or mix in more cocoa for a stronger chocolate taste.

Pour into the mixture into glass moulds or muffin cups and place in the freezer.

Drizzle melted dark chocolate over the ice creams and strew over toppings!

Place back into the freezer till required.

 

Tip!

Remove a little while before eating to soften slightly.
