Makes 4-6 slices
This particular recipe is extra creamy because of coconut butter, a bonus superfood that adds nutrients that support digestion, and slows signs of aging. The Hemp Seeds add a whopping addition of proteins and omegas. Totally yummy and good for you to. A winner all round.
1 Cup Almonds
1/2 Cup Cashews – soaked overnight
1/2 Cup Shelled Hemp Seeds
1/2 Cup Desiccated Coconut
1 Cup Coconut Sugar
1 Cup Dates, pitted and soaked
2 Cups Cashews – soaked overnight
1 Cup Nut Milk – of choice
1 Teaspoon Vanilla Cream
1/2 Cup Maple Syrup or Raw Honey
1/3 Cup Coconut Butter
1/4 Teaspoon Himalayan Salt
Soak cashews overnight and drain. Once drained add the cashews to a food processor along with other ingredients and process until blended well.
Press into a wax paper lined loaf pan.
Make it about 1/2 inch thick use a spoon to flatten the surface
Place in the fridge while preparing the Filling
Blend the drained cashews and all other ingredients until very smooth.
Pour the mixture over the crust and freeze for approximately 1 1/2 hours.
Refrigerate after that, with a piece of parchment covering the surface to keep it from drying out and cracking.
