Chocolate Cherry Coconut Slices
Description
Easy to make and yummmy! 
Ingredients

Base

 1/2 Cup Madjool Dates - Pitted

1 Cup Raw Almonds

1/2 Cup Oats or Quinoa Flakes

1/2 Cup Shelled Hemp Seeds

1 Tablespoons raw Cacao Powder

 1 Teaspoon real Vanilla Essence

3 Tablespoons Water

Pinch of Sea Salt

 

Cherry Coconut Layer

2 Cups Frozen or Fresh Cherries - Pitted

1 Cup Desiccated Coconut

1/4 Cup of Stevia

1/2 Cup of Raw Cashews – soaked overnight - drained

1 Tablespoons Coconut Oil

1 Teaspoon real Vanilla Essence

 

Chocolate Layer

3 Tablespoons Coconut Oil Melted

3 Tablespoons real Maple Syrup

3 Tablespoons Raw Cacao Powder

Instructions

Base

Line a 20 x 20 cm baking tin/tray with waxed paper.

Mix the nuts and shelled hemp seed in a food processor, then add the dates , oats and add the water, vanilla, cacao, sea salt and water.

Pop the mixture into the prepared baking tray and press down with your fingers

 

Cherry Coconut Layer

In the food processor, mix the nuts and coconut together, then add the cherries.

Mix until smooth, then add the stevia, vanilla, melted coconut oil and pour on-top of the base.

Place in the freezer for 30 minutes before doing the chocolate layer.

 

Chocolate Layer

For the chocolate layer, mix the melted coconut oil with the maple syrup and cacao in a bowl with a whisk then pour on top of the slice and place in the freezer for 1 hour.

Take out 20 minutes before serving.
