Yummmy carrot cake protein bites. I wish I could invent a healthy, low-calorie vegan cream cheese icing for these suckers but alas, I don’t think one exists.
Either way, these are a great little snack and can be enjoyed guilt-free. No sugar, no salt—just fresh, whole plant-based ingredients and the perfect amount of sweetness.
1 Cup Shredded Carrot
10 Medjool Dates
1/4 Cup Raisins
1 Tablespoon Fresh Ginger (Finely Minced)
1/2 Cup Shredded Coconut
1/4 Cup Chopped Walnuts
2 Tablespoons Hemptons Hemp Protein Powder
2 Teaspoons Cinnamon
Extra Water As Needed
Coconut for Rolling
Mix all ingredients in food processor making sure that dates and walnuts are chopped up well.
If the mixture is too dry, keep adding one tablespoon of water until the mixture is uniform and slightly sticky.
If the mixture gets too wet, add more cinnamon and coconut.
Form into balls.
Roll each ball in coconut to evenly coat.
Arrange balls on plate and sprinkle with cinnamon.
Store in freezer.
Remove a couple of hours before you’ll need them to defrost.
