Packed with goodness to compliment any plant-based diet on-the-go, these vegan protein snacks are coated in dark chocolate chips – yummy .. but, we’ll say it’s for the anti-oxidants.
Combine all ingredients (except the chocolate for melting) in a large bowl and mix well.
Roll “dough” into bite sized balls (add more nut butter if consistency is too dry to roll into balls)
Place balls on a parchment-covered tray. Melt the chocolate in a double boiler (put the bar in a bowl and put the bowl in a pot of hot water)
Coat the balls in the melted chocolate and refrigerate them until hardened
