Coconut Matcha Protein Bites
Description
These protein rich bites, deliciously have a coconutty centre, covered in raw chocolate and some chopped pistachios.  
Ingredients

Coconut filling

1 Cup Unsweetened Desiccated Coconut

1 Scoop Hemptons Hemp Protein Powder

3/4 Teaspoon Matcha Powder

2 Tablespoons Ground Almonds

2 Tablespoons Coconut Oil

1 Tablespoons Maple Syrup

 

Chocolate Layer

2 Tablespoons Coconut Oil

3 Tablespoons Cacao Powder

1 1/2 Tablespoons Maple Syrup

Chopped Pistachio Nuts to decorate

Instructions

Place all of the coconut filling ingredients into the food processor and blend until everything is well combined. You want to be able to press the mixture together with your hand and it hold together and be slightly sticky.

If your mix is too crumbly, then you can add some extra maple syrup or coconut oil.

Take some of the mixture in your hand and mould into a bar shape. Repeat until all the filling has been used.

Place these in the freezer to set.

For the chocolate

Mix together the melted coconut oil, cacao and maple syrup to form a smooth chocolate.

Allow this to thicken slightly and coat each of the bars in the chocolate.

As they're cold, this should set pretty quickly, so I like to drizzle a second coat over the top and then sprinkle with chopped pistachios.

Top tips

  • If you use a wire rack then it will allow the excess chocolate to drip off.
  • I like to hold the bars and drizzle chocolate over them rather than roll them, as this prevents as much excess coconut getting into the chocolate.
  • When you’re finished, rinse the chocolate mixing bowl/pan with hot water and it will pretty much wash straight off.
