Funky green pistachio, matcha and hemp protein energy balls! Fudgy, naturally sweetened nuggets, perfect for giving you a quick boost, or crumbled on top of your favourite bowl of yogurt
A nice balance of fat, carbs and protein…just sweet enough to satisfy without leaving you wanting more.
Why add Baobab? Well it contains :
1 Cup (180g) Pitted Medjool Dates – soaked overnight and drained
1/4 Cup (30g) Hemptons Hemp Protein Powder
1 Tablespoon Baobab Powder
1 Teaspoon dried Lime Zest
1/2 Cup (55g) Shelled unsalted Pistachios
1/2 Cup (50g) Raw Cashews – Soaked overnight and drained
3 Tablespoons (42g) Raw Cashew Butter
1 Tablespoon Matcha Green Tea Powder
Seeds from half a Vanilla Pod or 1 Teaspoon Vanilla Extract (Not Essence)
Pinch of Pink Himalayan Rock Salt
Add the pistachios and cashews to a food processor and process to a fine crumb.
Remove and blend the dates into a paste .
Add back the pistachio and cashew crumb and all other ingredients and process to combine; 2-3 minutes.
Divide the mixture in to 15 -16 balls (approx. 20-22g each if you want to create even ones!).
Put into a sealed container in the fridge. They can be stored for up to two weeks in the Fridge or the Freezer for up to one month.
Take out of the fridge a few minutes before eating if you want them to be a little more “fudgy”.
