Puffed Amaranth Chocolate Bark

A healthy midnight .. actually, anytime snack that tastes out of this world! 70% dark chocolate, roasted hazelnuts and a superfood .. puffed Amaranth. Try it once and never snack on anything else, ever again.

Ingredients
  

  • 3.5 oz 70% Dark Chocolate
  • 1/3 cup Popped Amaranth
  • 1/4 cup Chopped Roasted and Peeled Hazelnuts

Instructions
 

  • Puff the Amaranth
  • Place the chocolate in a bain-marie and heat till it is melted.
  • Remove and mix with the popped Amaranth and hazelnuts.
  • Add to a waxed paper lined freezer-proof container and spread out evenly.
  • Put in the freezer for approximately 15 minutes.
  • Take out and cut into pieces.

Notes

Alternatively, you can use white chocolate and add chopped dried cranberries and chopped macadamia nuts … yumm!
