  • 1 1/2 Cups Cups puffed Amaranth Seed – follow link on how to puff the seed
  • 1 Cup Dried Apple Chips
  • 1 Tablespoon Dried Rose petals – crushed into pieces
  • 3 Tablespoons raw chopped Walnuts
  • 3 Tablespoons raw Pepitas/Pumpkin Seeds -
  • 2 Tablespoons Shelled Hemp Seeds
  • 1 Tablespoon Chia Seeds (Raw, White)
  • 1/3 Cup Honey/Brown Rice Syrup For Fully Vegan Version
  • 1 Teaspoon Pure Vanilla Extract
  • 1 Tablespoon Coconut Oil melted
  • 1/4 Cup Almond Butter


  • In a large bowl, combine amaranth, walnuts, pepitas, hemp seeds, chia seeds and rose petals and apple chips – crush the apple pieces smaller if they are too large.
  • In a small bowl, combine the coconut oil and almond butter and place in a saucepan over a low heat. Heat until the coconut oil is melted.
  • Stir well to incorporate the coconut oil into the almond butter
  • Add the honey (or brown rice syrup for fully vegan bars) into the bowl with the amaranth mixture, then add the vanilla and coconut oil almond butter mixture
  • Stir to combine well, then press the mixture into a 15 x 30 cm baking dish lined with waxed baling paper
  • Place in the freezer to set up for about 20 minutes or so (they can be eaten right away, but taste best when allowed to harden a bit).
  • Best stored in an airtight container in the fridge!
